What would happen if I replaced the batteries in my copies of Sapphire and Emerald? Would the time cycle just go on as if nothing had happened, allowing events to come and go and letting me grow berries, or do I need to fuck around with a couple of things as well via a hacking device?

This is what would happen, but the clock cycle may be out of sync with reality. It may or may not prompt you to reset the clock, and if it does, it'll only do it once.
Also you may need to fix the berry glitch to get berry growth working properly, but practically everything in gen 3 past RS has the patch to this, so just trade with Colossseum/GoD, apply the patch from FRLG/Emerald, or scan an e-card from an e-reader/Pokemon...

May's contests were complete asspulls most of the time because they had no idea how to write them yet.
Nah, because DP had better contests in general. During Hoenn they were mostly battles with sparkles. In Sinnoh they'd figured out how to make contests feel more like their own thing. And more screentime was devoted to Dawn actually training her Pokemon and planning the appeals/strategies.
