So, I hear they removed these because people were using the letter seals to bypass the same language filters that later fucked up Cofagrigus.
Is there any chance that they could return? I mean, hell, they could adapt the language filter to sense letter combinations that spell naughty words, or remove the letter seals, and let us enjoy our balltism's final form in peace, right?

Yeah, no
If it was just letters they could have simply got rid of them and just allowed shapes and shit.
Far more likely the reason was that they're simply lazy and didn't want to bring the balls over to new gens/they weren't sure how to transfer data of them from old gens to new ones.
Gamefreak is just lazy. Enjoy them in the D/P remakes in which they will only be available in that game too.

I've lost the magic that made Pokemon fun to me. I've played through Oras and Xy once each but can't seem to play much more than that. I've even tried playing the other gens and I can't bring myself to do it

I got burned out on Pokemon for a long while but I suddenly feel the urge to do some nuzlocke runs, especially a wonderlocke on Y and maybe a mono Poison run through Blue. Just think up some challenges to force yourself to play through the games in a way you wouldn't normally. It might help you appreciate the games in a new way.
Nuzlockes are great. I'd Locke White, because it's easier, but not too easy.
Watch some of the anime or read the manga, see if it makes you feel like playing one of the games. Worked when I felt burnt out.
