Dumped the clutch a little hard through a mud hole the other night, got a nice rattle at idle immediatley after. First thought was exhaust leak, next was rod knock, then started noticing it went away when I depressed the clutch. Any guesses as to what I'm going to find when I get the bellhousing off? I'm assuming broken clutch spring, or flywheel cracked, not really too sure.

Sometimes its just the catalytic converter believe it or not, disengaging the clutch reduces vibration to the rest of the vehicle making the cat not rattle

Look for loose things. Could just be an exhaust component or whatever as others have said, or maybe flywheel.
Does sugar in fuel really destroy a engine or fuck stuff up? or is there a better additive that could be used to stop a vehicle from running once it gets a couple miles away?

You need a 4.3 truck for the easy swap.
Not too bad. You can buy off the shelf engine mounts for that along with headers and other exhaust components. If the oil pan will work then it should drop right in. The 2.8 V6 T5 has a 60 degree bellhousing so it won't bolt up to the 305. You can use a standard GM 90 degree bellhousing on the 305 with a spacer plate that serves as a bolt pattern adapter too though. That would allow you to get the input shaft where you need it in the pilot bearing. If you can't make that plate though then the cost of buying one or having it made isn't worth it. You'll kill...

Holy high mileage batman. I got one with 95000 miles for $1.8k (and it still had problems everywhere).
Check for rust in the spare wheel well.
Check for water and rust in the passenger side footwell.
Check if the power windows go smoothly or if they appear to struggle.
Check if it idles smoothly with air, lights and heaters on.
Could go either way. The car has the potential to be reliable for a long time, but if it's been beaten, it'll show. Probably around 1500 miles after you bought it.

What does /o/ think of the Cadillac ATS? I test drove a used one the other day and thought it was great (even though the guage cluster is UGLY and the touchscreen is p laggy).
That aside, the handling and general feel of the car was awesome.

Never driven one.
Everything I've read about them says the chassis is if not the best handling chassis on the market today, at least one of the best. But both 4-cylinder engine options are underwhelming, and the build quality is not the best. They also do poorly on reliability rankings. But they turn and stop phenomenally.
I know that the "Standard", "Luxury" and "Performance" trims all have their own completely different suspension calibrations, and handle/ride completely different. So it's very important to know which one you drove. There's also a 4th "premium" option which has the fancypants electronically adjustable suspension.
They drive well, but half of their parts are from the Chevy bin to make them so competitively priced. It's easily noticable on a closer look, for example as you said with the garbage MyLink infotainment.

They have among the best ride quality in the world in terms of luxury cars in their class (thanks to magneride suspension) and now they are the fastest you can buy in comparison to their competitors.

I know the direct competitors as far as "hot hatches" - Golf GTI and Hyundai Veloster Turbo. Are they worth test driving or should I look in another segment? I want small, enough fun and <$24,000

Veloster tarbo is pretty meh, looks sporty but it really isn't. If you're okay with a Korean car, try to find a 2013+ V6 Genesis Coupe.
Other than that, the obvious suggestions like Golf GTI, 370Z/G37, maybe a WRX/STI or Mustang/Camaro come to mind.
