Depends on the customs of where you live, in my country it is expected that both thank each other.
Either way, it shows you have manners which is nice.
I say thank you. I don't care if they say anything back, they're working for a big ass company, they don't have anything to be thankful for when I shop there.
Usually the employee says thank you when given the money and the customer says thank you when getting the change back.

It's a very fine powder in a tin; you just take a small pinch of it and press it to your nostril and take a sharp pull. Repeat for otherside.
