just got a set of global knives but I'm not really happy with them
they are great for some things, but I find they tend to form a vaccuum when cutting anything wet and dense, and the smaller knives are awful, they just scaled down the whole knife so you're left holding this tiny handle
I'd probably just get one knife for sushi and ultra thin cutting

I like a light handle, but I think these are even too light for me
worst is useing them for anything involving bones, they are much too sharp and the edge is too thin for butchering type work, the blad cuts right into the bone and it's too easy to accidentally cut off small pieces of bone

I like vinegar based more than mayo based. There's a sandwich shop around here that makes a really good vinegar based jalapeno slaw. I always get a side of it whenever I go there for lunch.

Sriracha became a meme food and it took all of the companies several years to realize (and attempt to capitalize on) this. They probably also hesitated until competitors started doing it as well.
The result is exactly what you'd expect when organizations attempt to jump on retarded, spur-of-the-moment internet trends without lasting power. It's weird and tacky and people don't post pics of their sriracha bottles on social media anymore and so it feels pretty misguided too.

Are there any good books on cooking theory? Not a cookbook, but an actual book that teaches you the rules of cooking, what flavours work together and why. I want to break free of just following recipes mindlessly without any understanding of why im doing what im doing.
