Is there any Japanese senpai here? I have a question.
On an article on Serious Eats, I found the following comment:
"'Evenly cooked steaks'
"Is this an American thing? I've never heard of this being the goal of steak cooking. Do they taste good that way? In Japan we go out of our way to unevenly cook the meat."
Can anyone explain this to me? I'm very confused. Why would you intentionally cook the steak unevenly?

Get the best strip steak u can or filet mignon
Thaw in cold water
Use a cast iron pan, use high heat
Salt and pepper both sides of steak
Throw steak on top of 1/8 stick of butter
Occasionally tilt pan to sear 1/2 of the steak
Do this for 6 minutes
Scoop steak from pan
Let steak rest 10 minutes
Eat steak

Evenly cooked just means that the entire steak is at the desired temp.
One end isnt well done , while the middle is medium and one end is raw ( extreme example)

So it's my birthday today. My town does not have any good restaurants and I don't feel like driving out of town to go to any good ones. I finally settled on Texas Roadhouse.
I need advice /ck/. What should I get? This is one of the few times a year I get to fucking stuff myself like a fat fuck.
What does Texas Roadhouse have that isn't garbage?
Texas Roadhouse isn't bad. Their steaks are great, but what I really like is the Chicken Critters. They're really crispy, the white meat chicken is good, and their honey mustard is excellent.
Of course, I prefer chicken anything over beef, but like I said, their steaks are also really good. Check those out.

Yes, usually a trimmed brisket, or cheap roast. I cut it with the grain so its really chewy....I don't like tender beef jerky.

So I just got hired in a mid level kitchen and today is my first day.

over the holidays I've been trying to make good macaroni and cheese. I've been using a quick recipe that skips baking it in the oven. also I've had more success just using cream and butter as a base instead of making a bechamel. right now the part I'm stuck on is the taste. using a ton of sharp cheddar increases the salty and savory flavors I want, but it also increases the more overpowering sour fermented flavor. I figure I need to use different cheeses to balance things out. what other cheese is good?
here is the recipe for my latest attempt:
1/4 cup heavy cream
2 tablespoons butter
mustard powder
red pepper
black pepper
chicken bouillon powder
worchestershire sauce
