I disagree. Canola oil tastes horrible due to the eucric acid content. They might have engineered it to be "low acid" compared to other kinds of rapeseed oil, but it's still not "NO acid".
Corn oil has a very neutral flavor. I agree it's good for general purpose use, but the whole point of EVOO is that it's flavorful, and thus good for dressings and sauces. Why on earth would you choose to replace a flavorful oil with a neutral one? That's just silly.
well, some recipes do benefit from using olive oil. i just recently bought some to use to make hummus. i used to take it for making salad dressing too. but somehow the taste got too overpoering over time and i now stick to sunflower

Any real restaurant owners here? I got an inheritence and I'm thinking about opening a takeout italian place. I'm pretty familiar with restaurants because I'm 25 and have been working in a Wendy's and presviously an Arbies since I was 18. I haven't managed to crack management yet, but my supervisor is telling me if I keep it up I'll make assistant manager by 28, so I'm pumped but want to strike out on my own.
I'd serve mostly pizza, cheesebread, and maybe a pasta dish. So really I'm just asking is opening a small restaurant very profitable and a good idea for someone with a lot of business sense and kitchen experience?
