If I burn 1500-2000+ calories and take in ~1000 or less, will i still be able to look like pic related?
currently 6'2" 189lbs...
today was my off day so all i ate was 3 egg whites and a sausage + 2 small bowls of spaghetti with turkey + 1 piece celery + glass of 100% apple juice. totals came out to:
614 calories
~50 grams of protein
I also took two vitamin C supplements which contain 10 calories each and 2 grams of sugar...
Was this a healthy off day? I literally did nothing all day but rest. I'm already big and don't need...

So would a 3 day workout be suitable for a beginner or should you start out strong?
3 days is way too much. 8 hours is best for arms, no more than 10-12 for compounds.
seriously though as a beginner follow SS or SL, both are 3 days a week. This is plenty for strength and you need off days for recovery. If you're in the mood you can always do cardio on off days.

I have begun starting strength to get back general strength, and when I finish with it I want to do some other sport instead of weightlifting, any suggestions?
I've considered soccer, rock climbing, and martial arts. The problem with soccer and martial arts is I need other people which won't always be available so I'm thinking...

Do you bench-press by yourself?
I used to go to the gym with a mate and we always spotted each other on the bench. I have no problem deadlifting or squatting big weight by myself - it's only with bench that I always fear dropping the fucking thing on me.
Should I just man up or should I ask someone to spot me? Or save the spotting for when it's a lot of weight?
I always bench alone, because I'm mostly in the 8-10 reps range, and I know my limits.
Just ask a random person in the gym to spot, or learn the roll of shame if you're autist.

Ask for a spot if you know you are gonna go to failure or if you know you might get to.
I personally prefer to bench press at home in my squat rack with the safety bars than i do at the gym.
It's not like you need to go to failure anyways.
What is so special about protein that makes it build muscles? Why can't I just bulk on carbs?

assuming you're being serious, muscle is made out of protein. Protein is essentially a long chain of molecules called amino acids. When your body consumes a protein, it breaks it down into amino acids and then builds the amino acids in order to make the exact kind of protein it needs. Carbohydrates simply don't have what is needed to build muscle.
