A few days ago I saw the best cooking advice I've ever read on /ck/ and think it deserves a thread of its own
Here's what you're gonna do OP. Listen carefully because this is very important advice. Lots of people think cooking is all about complicated recipes, big cookbooks and arduous effort. Really it's more of an innate thing.

Learning to cook is much more simple, so pay close attention to what I'm going to say. Are you listening?

Fry an egg and experiment with various seasoning. This will give you an idea of what flavours go well together which is the most important quality in cooking. Fry an egg, cut it in quarter, season each quarter differently. Try one with cayenne and, I dunno, chives? Just experiment with lots of seasoning combinations.

Then fry another egg and repeat the process. Keep frying eggs and experimenting until you get a good idea of what works. You can eat 3-4 eggs in a day, heck you're from /fit/ so probably 6+. If you eat 6 eggs in a day, that's 24 egg quarters, 24 seasoning combinations in a day. You're talkng about 1000 seasoning combinations in just over a month.

At this stage you'll be a spicemaster and what/how you cook wont matter because you'll be better at seasoning than 99% of professional chefs, and this WILL make you a good cook.

hey /ck/, I wanted to make a complete set of cooking knives for someone, but I don't really know what knives you actually need, because I don't do a lot of cooking. when I do, I just use a chef knife for basically everything.
I see sets like this and I always wonder if people actually use all these different knives?

Cook's knife. Carving knife. Bread knife. Maybe a paring knife.

That's all you really need. Don't buy them in a set, unless it's just some sort of bundle deal being offered by a quality brand. You usually get better knives for the same price when you buy them separately.

I usually do a bowl of fruit (yes, tomato is a fruit), with maybe cottage cheese, or hummus, and a piece of toast with some canned fish, almost always with some avocado.

I'm trying to eat healthier. I have a pregnant girlfriend and I just want my family to eat right and I want to raise my kid healthy. I really want this, but I just can't seem to get ahead. I can't buy all of the ingredients or I don't even know what to make. Anyone know a good website that isn't fucking complicated. I just want simple recipes for simple healthy food.

desu, skip the recipes.

a meal needs to have 3 things.

you need some carb energy. mashed potatoes.
then you need supplemental protein. chicken.
finally, you need a portion equal to the two previous (read as half of you plate should be this) fiberous plant material. (kale).

you utilize the carbs, power up with the meat and the veggies are used to carry it and provide supplemental nutrients.

from there, its an idea of combining 2 or the 3, and creatively applying it to the third. or a mix with many small portions (think 5 to a plate, maybe more).

what ive been doing a lot recently is making a pot of rice to be used for the next few days. using the rice as a base, you can make a lot fo dishes, either as stir frys that you put on top of the rice, or dishes to be eaten alongside the rice.

kimchi has saved my lfie this past month. its good in that its easy on your body (the cabbage makes it go down well). and it can be supplemented with chicken, steak, other cold veggie dishes, greens, etc.

think less about recipes imo and more about what you have and use. build a base off these core ingredients, and eventually recipes come to you, and you can explore from there.

So I want to make hollandaise sauce but I don't have a glass bowl to use for my double boiler.

I've read and seen you can use a stainless steel bowl as well. Sound good?

I do it all the time. Be aware that it heats up & cools down faster than a glass bowl, and doesn't hold any heat really. You can also control the heat by taking it off the steam for a few seconds.

Cool, sounds good to me. First time making this sauce and wasn't gonna go buy a new bowl just to fuck it up the first couple times.

I actually made a hollandaise in the microwave earlier just for giggles and it tasted pretty good to be honest.

I never have hollandaise either to be honest, but my Mom really would like me to come over and make it for Eggs Benedict for her this Sat morning so I'd like to try a few times.

Moving on and off heat is no problem, I have a gas range and a pot big enough to hold the bowl so everything will move at the same time.

I work at a deli and the main point of my station is baked potatoes. I make roughly 5 trays of baked potatoes a day, each tray holding ten potatoes. Any professional tips to managing these butes? I work 7 to 9 hour shifts and usually toss any potatoes older than 2 hours if that info helps.Any tips in dressing them would be cool as well.

even distribution of the ingredients is key when it comes to baked potatoes. you don't want to have one incredibly delicious, cheesey, buttery bite followed by another that's just plain potato. also presentation. make it look appetizing

id say maybe cut into the potato multiple times after the initial large cut to try to get the toppings in all the nooks and crannies

melt the butter so you can spread it evenly. salted butter might be the way to go. butter should probably go first, then maybe cheese, sour cream, then green onions

When I watch shows like Cake Boss, I just don't get it...it seems like the large majority of the cakes they make are inedible, the entire outside of it is often rice crispies treats, and then they'll have it wrapped around shit like PVC pipe and all that....

I just don't get it, how does one eat a cake like that?

So many artisan cakes are like this. They're all on presentation, they look nice but the cakes taste like shit. If I'm ordering a goddamn cake I don't want it to be store-bought yellow cake mix with 10lbs of marzipan slapped on, that's fucking horseshit
