How do i master the traditional fried rice with chicken and vegetables that you can get at any thai restaurant? Which soy sauce do i have to use? How do i achieve the perfect tender chicken? Show me what you got!

That'll be tough without one of those gas fueled jet fired burners that are used in Chinese and Thai restaurants. They have foot pedals to control the gas flow while leaving their hands free to mix stuff up in the woks.

I have a bunch of different super hot peppers including ghost (bhut-jolokia), Trinidad dooglah, chocolate habanero, lemon drop, and several wild bird peppers. My friend makes sauce with them and I have jars and jars of that stuff. What should I do with these peppers? Suggestions? Thanks.

Mackerel is the big one for me, it's less than £5/kg here which makes it cheaper than beef and pork and close to chicken when it's on sale.

That's instant couscous. It has the advantage of being easy and fast to make, but I'd rather have rice. Making real couscous is a pain in the ass, but the result is much better. It helps to have a bunch of women in the kitchen with nothing else to do for half a day if that's what you want.
