Go by smell and texture, it's the more reliable metric. Rotten meat smells BAD, or is very slimy and generally looks different from fresh raw meat. I don't know what cut that is, so I may be wrong, but I wouldn't eat that because of how brown it is.
Anyway, dates are just estimations, and any food product could rot much before or after its date.

Here is a thread to share the best-tasting recipes you know. I'll start by posting some sortof-OC. I made the pierogies from the poland thread a few weeks ago.

Pic 2: Here's the finished pierogies. I froze them on a baking sheet so that they wouldn't stick together as they froze.
Here's the recipe for them, copypasta'd from a thread a few weeks ago.
500g flour
330 ml water
1 egg yolk
1/2 teaspoon of salt
1 tablespoon oil
Mix the flour with salt. Make an indent in it, pour in the water and yolk. Mix it with a fork till it all comes together, then start working the dough. Do it for about 2-3 minutes. Then pour the oil into your palm and work the dough for another 1-2 minutes. It should be smooth. Leave it for at least 10-15 minutes, cover with a cloth.
Stuffing:
1kg of potatoes
250g quark, full fat
2 onions
Salt, black pepper, sweet red pepper (the spice)
Boil potatoes till they're soft, mash them while they're still hot. Wait till they get cold, mix in the quark and onions. You should dice the onions and fry them for a bit on a pan with a bit of oil. Then add about 1 tsp of the peppers. And salt to taste. It should be quite strong in taste.

My mom cooks roast in the crockpot, and then makes noodles with the broth. There are always leftovers, and after being refrigerated the broth always gels and really complicates reheating.
Is there a way around all that, in the reheating? or something to add to the broth that won't change the flavor or the texture notably?

I've got about 8lbs of diced beef in my freezer and I want it out so I can put other shit in there.
I'm bored af of making curries, stews and casseroles. What else can I do with it?

Make a nice pastry pie with tomato sauce, beef, onion filling.
Dust in spices, salt and tenderiser powder. I use a mix of spices that you might find a bit unorthodox. It includes peppercorn, caraway, cayenne, marjoram, nutmeg, good quality turmeric, rose, thyme, ajwain, cumin and ginger, all powdered and the spices (excluding nutmeg) all toasted lightly before hand.
Add something slightly sour to just wet it, like whey, then store in a zip bag with as much air squeezed out of it as you can manage.
After several hours, skewer and cook the meat. You can do this in a pan, under the grill/broiler or outside over coals/on the grill.

My favorite is Yuengling summer wheat. 6 bucks for a six pack and it's pretty decent beer.

In Japan shaved ice a popular summer treat. And when buyng that you get to choose a syrup with a specific flavor, be it "strawberry", "lemon", "melon" or anything else. What most people do not realize even at adult age is that all syrups are essentially the same flavor, only colored differently.
So what the point is here, is that most people are willing to accept something taste like something else, as long as some sensory information (color) and the correct mental preparation exist.
