>leftover soup for dinner
>forgot to take it out of the freezer last night
>microwave it for a couple minutes and dump container into pot
>there's now a puddle of melted soup with a huge ice block in the middle
>try to break frozen mass up so it will thaw faster
>can't because it's fucking solid ice
>liquid soup is now boiling
>start bashing the frozen soup with a spoon trying to break it up
>splattering shit all over the stove top
>it still won't fucking break up
>screaming at my soup in rage
>by the time I can eat I have burns on my arms and burned soup stuck in my pan and on my stove top
does anyone else know this feel?

I make my own peanut butter from cheap peanuts, because it's much cheaper than the factory made stuff and I don't want unnecessary palm oil/sugars and shit. I know that you are not supposed to store peanut butter in the fridge, but I do because I'm thinking my own does not have any preservatives and might go bad in room temperature.

What is your take on this, anyone else who makes their own peanut butter from cheap roasted/salted peanuts?

I've had a few kinds of "natural" peanut butter that said to store in the fridge right on the jar.

It's perfectly fine, you just have to stir it before you use it because it separates.

What made you think you're not supposed to?

i mean i guess breaking the peanuts down could make them spoil faster, but i think it mainly helps with oil separating. if you refrigerate it, the oil will solidify a bit more and stop separating as much.

it also depends on how much you make and how quickly you eat it.

I saw an anon mention Finnish meatballs in a thread and it got me interested. Does anyone have a good recipe for them?

Mix in 2 lbs ground beef, 1/4th cup bread crumbs, 1 teaspoon Worcestershire sauce. I usually do 80/20 ground beef, if you want it leaner, it will be drier.

For the sauce after sauteing your meat balls, de-glaze the cast iron pan (your a fag if you don't use cast iron btw) with about a half cup of red wine. Add a few heaping spoon fulls of sour cream after de-glazing and about 2 tbs. of Worcestershire. If you want a thinner sauce, you can add heavy cream. Thicker you can add corn starch. You can also add salt/pepper if you wish to your personal liking it in or not. Its a very adjustable sauce for adding any spices that you like.

Also, I don't really think "finnish" meatballs has a specific recipe. Lots include eggs in the meat, or none, some has cream, or butter, or etc etc in the recipe. I think its a dish that can have a lot of combinations of ingredients based on the family/town/restaurant that makes it. The only things that matter is that its beef balls with a white sauce. You'd actually love to experiment with a whole ton of different combinations. My recipe makes it more of a brownish due to the red wine, but it makes it imo silkier with a nice taste. My personal wine choice is Mogen David which is a very wet red concord that gives max flavour after the alch is bubbled off.

Going to be cooking an Italian dinner for a good number of people. I need help because last time it turned out shitty.

I'm not sure what to cook and what sides.

Current menu, it fucking sucks I know

Ragu Bolognese - start making 4 hours early, tomatoes diced from can, tomato paste from can, some pork/beef stuff, and basil.

Pasta - store bought dry from box

CHeese? I don't know but I guess you need cheese for the pasta. I used mozzarella and just flaked it on top last time.

Side 1: I don't know but I was going to take zucchini and sweet potato slices, some basil, and some chili flakes and bake it together.

side 2: Bruschetta - basil diced tomato + toasted bread

How do I make this not shit? Something else I should make instead? Maybe instead of ragu + pasta I do chicken picatta?

Ingredients aren't a problem and can get most any.

The first one or two cups are going to taste like aluminum ass, so just toss them.
After that there should be enough of a patina between the metal and your coffee to brew normally.

Boil the water separately before pouring it in, the pot can burn your coffee if you leave it on the stove too long.

While it's brewing, watch the colour of the coffee as it comes out of the spigot: once it turns a golden or honey colour, take the pot off the heat and let it finish.

We ate take out Chinese. My parents had made plans to go out for diner with my older sister, her husband and kids. My sister failed, after knowing this for months, to get money together to pay for her entire company and then my mother tried to get me to pay for her entire company (husband and kids) while my mother would then pay for my sister and herself+dad. Hearing this 4 days before the actual date I was sort of pissed that they just decided to do this and so we ended up staying home eating take out which was fine too. Suddenly my sister understood that I am not there to pay for her spouses, probably cause it was the holidays and she couldn't get away with it (which she tries everytime and my mother gives in way too much).
