So I've been reading about this dish called American Chop Suey / American Goulash.

Apparently it's elbow mac with tomato sauce, ground beef, onions, peppers, garlic, etc. There's no single recipe; I even saw one on Serious Eats that included Worcestershire sauce.

The funny thing is that I make elbow mac plus tomato sauce and ground beef all the time - it's quick to make, easy to eat, and reasonably nutritious. Seems I was making this "American Chop Suey" without realizing it.

So now that the dust has settled and people generally agree that carbonara should not contain cream but should at least have garlic and parsley I'm going to have a go at making it.
Question is do I use whole egg or just the whites? I was thinking of buying pic related.

I imagine that unlike the mass produced varieties grown for commercial purposes, they're much more susceptible to disease and pests.

Also lower demand being another reason that they're not as widely grown.
