Although this mindset is usually counterproductive when it comes to training, the quickest way to make gains is always going to be an individualized approach. There is no one-size-fits-all.

I'm the same as you and yeah you just have to gorge. Bulking for me just involves being full and miserable for months at a time, but it's worth it imo.
Make sure you eat calorie dense foods to make the suffering a bit lighter.

Yeah, beer has little nutritional content for the calories. Would be best to keep it at 1 per night, or even every other night.
Beer is awful for you, but if you drink it in moderation you'll be fine. Carb-heavy, but unless you're really obsessed about carbs I wouldn't worry about it.
