Bourdain has six rules for things not to do with regards to raw fish. Keep them in mind if you happen to see him at a sushi bar. Don’t forget, he’s now a trained martial artist himself.

1. Do Not: Make a slurry with all the wasabi and soy sauce you can get your hands on and then douse your fish with it. Make sure to taste your fish first.

2. Do Not: Dip your sushi rice down into the soy sauce—“unless you want to watch your rice crumble and disintegrate into an unholy mess in the wasabi slurry that you probably already made.” If you feel your sushi needs soy, lightly dip it fish side down.

3. Do Not: Say loudly, "This sushi is so fresh, dude." Unless you’re in a place where that concept would even be in question.

4. Do Not: Consider a sushi selection that includes mayonnaise. “Don’t get me wrong, I love mayo. Tuna salad on white bread is our version of Edo-style sushi. But it belongs nowhere near raw fish.”

5. Do Not: Mistake a lame pan-Asian place for a sushi spot. “You know the ones; unst, unst, unst music is playing in the background, edamame comes with a cloud of dry ice. A great sushi bar is like the perfect Irish pub. You make decisions with your sushi chef, with your bartender, over the course of the night, and you leave feeling extremely well cared for.”

6. Do Not: Order a California Roll. No explanation necessary.

It's unacceptably pleb. Use a packet of onion soup mix instead, that would be acceptably pleb.

If you don't want to be pleb at all, cook the roast in beef stock with a bouquet garni and whole spices.

My uncle really wants to buy me a pressure cooker for christmas but I feel like I don't really need one because I've lived this long without one.

What cool things can I do with one I can't do with a regular pot or slow cooker? I'm vegan and eat lentils or beans with some form of grains is pretty much my go to and I cook a lot of curries. Do things like Rajma masala really turn out different if you do them in a pressure cooker?

Anyway. Nah, there's nothing you can do with a pressure cooker you can't do with a regular pot and time. But the pressure cooker is faster. If you've ever glanced away from 4chan and noticed, oh, shit, it's late afternoon! and still wanted to have beans ready in time for dinner, it'd come in handy.

Mostly vegan here, and my pressure cooker sees duty at least four days a week. I mainly use it to cook beans. I can go from dry beans to cooked in 15-35min, depending on they type of bean. (Chickpeas take the longest). I can make lentil or split pea soup in 20 min.

My advice: get a big pressure cooker. You can always make a small amount of food in a big pressure cooker, but you can't make a big amount in a small one.

When I make rajma I usually cook the beans by themselves in the pressure cooker, and start the sauce in another pot, then give the two a little time to marry once the beans are done. Dry kidney beans take about 30 min to cook in my pressure cooker.

It really reduces the cooking time on beans. I find it worthwhile for that alone. And you can use them to do a bit of canning.
