If you're doing a LFG listing, just ignore the ones that don't read. Even if you tell them what they did wrong, their illiteracy means that you'll waste your time and they won't read your response anyway.
Players are rarely in short supply, though that depends on what system you're using. You lose nothing by moving on to better players and ignoring the shit ones.

My friend has been bugging me to run a Star Wars campaign for a long time, so I'm finally biting the bullet. I intend for all the players (all two of them) to be Jedi padawans with the storyline taking place before the events of The Phantom Menace.
As I understand it there are 3 systems to choose from; West End Games, WotC and Fantasy Flight. Any recommendations for which system to use?

Fantasy flight is great for low power "scrapping by campaigns". WotC is 3rd edition DnD with all that entails. Saga is closer to 4th ed, and I haven't tried the d6 since I was a kid.
So if you want high power, Jedi crashing star destroyers I'd recommend WotC, if you want to be something else I'd recommend Fantasy Flight
I'd probably recommend going with ffg. Been playimg EotE with my group recently and I feel like it's a really good system.

How do you feel about allowing actual knowledge to circumvent check rolls, provided that the character has the same knowledge and is capable of performing whatever action is being attempted?
For instance, if a party member is wounded in combat and receives a deep gash on their leg, would you allow a player to automatically pass first aid checks if they explained, in detail, how to properly treat such a wound?
Context is key. What's important is what the character /could/ know. In your example, if you were playing a barbarian as an EMT, yeah, you need to roll to see if your barbarian had that knowledge and skill. If you're a wizard who 'knows' moss grows to the north or whatever, I'd make a check to make sure that was true in this setting, but otherwise let it fly because it's relatively common knowledge. And yeah, a ranger knows what wolves eat, even if a player does it.

Autism. Pure autism. Is there any lore explanation why melee is even a thing in WH40K? There are flamers, meltas, shotguns and other shooties for close range so this ''hurr if da ork comes too cloz xD'' argument doesn't work at all besides they use swords and axes even when they don't fight orks or nids.
Because at the speed most melee units run it's faster than shooting. And flamers take a while to kill the stuff that normally wants to get up close and eat your face off. A chainsword is simply faster to draw and mulch an angry Ork brawler with.
