You could always get a different DE. Or a different taskbar on top of the Unity DE.
Also it's not even a taskbar, it's a dock, which is inferior, and completely pointless when the OS has a single-key search like that

All the spyware bs is made up and way overblown. Windows 10 doesn't spy on people any more than Facebook and Google do.
