I need to cook for 15 people this weekend. Got the main (beef and carbs) and dessert sorted. But I need an entreê idea.
Fresh veggies, seafood, a mousse of some sort, that's what I'm thinking because the main is heavy.

I usually like to make a minestrone soup or you could also make something like a pumpkin risotto dish. Its not too heavy so it wont ruin your main dish. That is something I'd make for starters.

I'm in a bit of a tight spot, /ck/. Low budget and infrequent shopping trips leave me scraping the bottom of the metaphorical and literal barrel to make dinner. Tonight I'm making beans and rice, using canned beans. My questions are:
Should I use black beans or kidney beans? I have no experience with kidney, so I don't know how they taste or work with other flavors.
Either way, how should I prepare them, and what spices should I use? I was going to heat them up in a cast-iron pan with bacon grease after sautéing an onion, but we have no onions left...

What's your white powder of choice for baking pies? Is tapioca powder worth the extra money vs cornstarch vs ap flour? My fillings taste good but I cant slice the with fillings like berries that have a lot of juice without the filling leaking out the crust.
I don't par bake the crust unless the recipe says so. I've seen recipes for the same types of pie some being baking in a par baked crust others in a raw one. I need some pie knowledge ck.

You should basically always pre bake crusts. Also I prefer the texture of tapioca, though it's an admittedly subtle difference that no one else in my family seems to notice.
