How do you make life without all the toppings and cheese shedding water and getting it all soggy and watery? I used fresh mozzarella instead of shredded. Was that my mistake?
I think there's different types of mozzarella some have more oil or water in them.

For fresh mozzarella to work right the oven has to be much hotter than your oven goes. We're talking 800-900 degrees F. Commercial ovens can't get that hot, either, which is why the standard fast food style pizza is made with low moisture mozzarella. If you want the good stuff made with fresh you have to go to a place with a wood (or sometimes coal) fired oven. These places are generally two to three times more expensive than chains or slice joints.

I eat there if I have a gift card, otherwise not happening. They do have some tasty stuff, but yea it's way over priced. Over $10 for a small cup of soup and half a sandwich, or I can take my happy ass over to chipotle and get like 1.5 pounds of delicious for $6.50.
