Just got done with my Monday night ritual of preparing chicken reserves for the week. Basically I just fill a pot with water and boil whatever chicken I can get my hands on. Tonight I did 11 chicken thighs on a very slow simmer. 3 thighs at first for an hour or so and when they finished I took them out, slid the meat off the bones, threw the bones back in the pot and then added 4 more thighs. Rinse and repeat.
What can I do to flavor up the profile a bit? I don't want to add any salt, oil or butter but anything else would be fine. I also always...

you could try making it like a chicken stock.
roast some mirepoix, get bay leaves, peppercorns, thyme, rosemary in a satchet and keep it in there to give it some nice flavor without salt.
Don't forget to deglaze your stock too, with a red wine or a vinegar or even a red wine vinegar
Onions with 73/27 ground beef cooking.
I prefer my onions cooked next to the burgers not in them.

Sweet potato gnocchi with bacon and peas, sauced with butter/bacon fat and sage. Tomatoes and Manchego.
Almost everything (even the sage) came out of the freezer. People have a bad habit around here of buying shit they don't need when it's on sale and throwing it immediately into the freezer. This was just an easy meal to clear out a few things.

Costco has great nuts but the bags are too big. By the time I finish them, they've not so fresh anymore. All the small batch bags I've found have been not so fresh to begin with.

Uh a store that sells by the oz? In my area we have Sprouts and they have nuts and dry goods in giant containers so you just put however much you want into plastic bags.
I see these things in more affluent/nicer parts of town where the markets don't really fear people trying to steal or put their grubby paws into the food.
Winco has nuts in bulk. No guarantee on freshness.
