Hey /ck/

I'm tired of going to subway all the time and I've decided to start making my own subs. My goal is to make some phat stacked subs like you see in cartoons.

I need some ideas for ingredients. So far I'm set on using a combination of turkey breast, roast beef, chicken breast, and/or ham as the meat, one or two cheeses - muenster, jack, swiss, provolone, mozarella, or something else, and most or all of the following:
Lettuce
Tomato
Onion
Bell pepper
Cucumber
Olives
Chili (or other spicy?) peppers

What am I missing? Also, any other tips are appreciated such as herbs and spices or condiments to use as the above are just ingredients. These are the basic things for any sub that I plan to have in house at all times, but on special occasions I'll probably get other things like eggplant or ground beef for meatballs or other stuff for one-off subs.

Pic kind related - it's no sub, but it's about as ambitious as the type of subs I'm trying to make.

Here's a recipe from a morning programme I watched like 15 years ago. It was talking about foreigners and the dishes they invent that they think we Italians eat when we don't know what they are, like alfredo sauce and chicken parma.

100g/quarter pound each of butter, cultured cream (just heavy cream, if you're in the US, since you guys don't do cultured cream, right?) and grated grana or parmigiano. Plus extra cheese to serve and chopped parsley if you wanna get all fancy and shit.

Cook the pasta as you melt the butter in the cream and let the cream reduce a little.
When the pasta is just about done, drain it from the water and add it to the thickened cream/butter mixture.
When the pasta's done, off the heat, add the cheese and tumble to mix through. If you're using parsley, add it at this point, too.
Let sit a short while for the released starches to thicken the sauce a bit and serve, topped with more cheese.

If it's from Rome, why do none of us Italians know what the fuck it is? If it's from that restaurant, why doesn't the restaurant actually call it the name that you guys gave it when it's the name of said restaurant? None of that adds up because it's not ours, but yours.

Currently marinating chicken breast with pic related, main ingredients being mustard, oil and lemon juice.Is it a good idea to boil the marinate afterwards to use it as a sauce?

If you want to use the marinade as a sauce then yes, you need to heat it up to make sure it's safe to eat since it has been in contact with raw chicken.

Personally I think most marinades are too acidic to make good sauces, but if you made a really mild marinade then it could work.

Most vegetarian friendly cuisines?

From experience I think Indian, Chinese, Mexican, Greek/Turkish/Middle Eastern (they all sort of blend into one really), Italian and Thai.

Help me into vegetables /ck/

I''ve been a picky fucking child all my life but when i started cooking it helped me out significantly. Expanded my diet a ton.

Vegetables, however, are still a problem. Especially green ones. How can I cook them and make them more appealing when i just don't fucking like them as of right now? I do better with things in a sauce but i'm still a picky shit.

Vegetables i like-

>onions (all kinds)
>mushrooms (yeah okay it's a fungus)
>red peppers
>carrots
>lettuce
>cucumbers
>celery
>can sometimes tolerate asparagus

So yeah, not much. How do you make vegetables fucking delicious?
