I have half a dozen bottles/jars of prepared mustard in the fridge, but use Coleman's more as a spice, for that pure mustard seed flavor.

Hey cu/ck/s, would any of you eat this steak? Personally the idea of 400 day aged steak is not that appealing to me and imo the meat in the video looks grey and perhaps even spoiled. I think this huge piece of what would otherwise have been great meat has been wasted, but perhaps one of you can tell me how safe this actually is to eat.

this is what we do at work:
we make creme fraiche, which is just 1 fallon of cream with 1/2 cup of buttermilk whisked in and left to sit out at room temperature for two days.
then, to make butter, we take 1/3 cup of creme fraiche and whisk it in to a gallon of cream and let it sit out for two days. then we take the cultured butter and put it in the food processor in smaller batches until the solids separate from the buttermilk, then squeeze out the remaining buttermilk by hand with cheesecloth.
