I see it as a market for familiar agriculture to potentially thrive. When it comes to food production, people need to stop worrying less about those superficial philosophical crap and look at big industries and basically the money game, of course directly linked to the quality of food, social status and that kinda thing.

Mostly, yeah, in the same way advertising is. They try to tell you that their foods aren't genetically modified, but all of our food has been modified genetically, just not always in a lab. They try to tell you their food is organic but so is the food you buy at the grocery store that doesn't come in a box. They're just filling your head with shit but the food is still fine.

I have about 5kg/9lbs of lemons that are slowly going bad. What's the best way to extract the juice and store it?

I have no canning equipment so was planning to just remove the skin and throw the flesh into a food processor then run the final product through a seive and some muslin.

Is there an easier/better way to do it than above? I would prefer not to cut each lemon in half and squeeze it.

If I just put the juice in a bottle in the fridge how long can I expect it to last?

And pith. It's important you remove as much pith as possible

That's how I do it if there are no seeds. Like pith, lemon seeds can ruin your juice because they bring an unwelcome bitterness.

I recommend you grate the skin first to remove zest. Zest dries wonderfully.

A second recommendation: turn at least one of them black and dry it out. Black lemon/lime is a pretty common cooking ingredient in the gulf areas (both Persian and Oman), Yemen and Ethiopia. It has an odd smokiness to it and a sweet-tart flavour unlike fresh lime/lemon.

Finally, as for storage, pour the juice into ice trays, freeze, remove and store in a vac-sealed bag or zip-top freezer bag. One cube, depending on the size of your tray, will vary between 1-2 tbsp in size.

Depends. If you cook and sweeten (essentially, make it into lemon syrup), it can last quite some time in the fridge. Nearly indefinitely, if not indefinitely outright. Otherwise, its refrigerated shelflife will depend on just how far gone the lemons are already.

Okay, so, flan looks really good. I mean, just look at it!

But it has the mouthfeel of boogers.

Does anyone even really even like flan? If so, do you have any tips on how to eat it/where to get it? I think the last time I had flan I'm pretty sure I got it at taco bell, so that may have been the problem.

In my experience, nobody likes flan who didn't grow up with it. That's just how it is.

I grew up with it and I still don't like it very much. It's alright, I guess, but I've never been much of a sweets guy anyway, and custard doesn't do it for me. Once in a while I like it, but for the most part, eh.

I just started cooking for myself recently (not grilling for once) being an 18 year old, lazy, life sucking piece of shit, and I have discovered two things:

Being a food loving Amerifag has its obvious problems, and I would like to know what foreign dishes I should try.
The first thing I cooked was spaghetti, which I fucked up the first two times, but eventually got right and loved. My second, last night, was goulash. Again, it was amazing.
Could you please recommend a personal favorite dish of your country or others? I'm very open minded and would like a challenge.

A Czech favorite originating from Hungary, you should definitely be eating guláš.

I also recommend svíčková (braised beef with czech dumplings and cream sauce), holubky (stuffed cabbage rolls in tomato sauce), and kulajda (dill soup with sour cream, potato, and mushrooms).

Puerto Rican food is pretty interesting, like most Caribbean food it's hearty and filling with lots of unique island flavors. Mofongo has gained quite a reputation due to food television in the past few years. Arroz con gandules (rice with pigeon peas) is the perennial side to most PR meals, though we also eat white rice, rice with red or pink or black beans, and many other preparations. There is nothing on earth like a good pernil (roast picnic shoulder -- with lots of crispy chicharron). There's pasteles, kind of like tamales with a yuca-based masa instead of corn, and wrapped in banana leaves. Pastelón, best described as a sort of Caribbean lasagna made with ripe plantain slices instead of pasta, ground meat, and cheese. And there's the Latin favorite, sancocho, a hearty soup made with meat, corn, and lots of tubers. I like the PR version best but I also really like the Salvadoran and Panamanian versions I've tried.

I love me some enchilada casserole, but that looks disgusting. The meat shouldn't go on the top layer and it looks like you put the sauce over the cheese. It also doesn't look like you lightly fried those tortillas at all beforehand.
