You could just put a little egg was/milk to help it stick, as long as you don't drown it it'll be fine, but usually with fish the crumbs will stay on just fine

My mom always gives me candy bars when I come to check in on her and dad. For Christmas, she gave me a ton of chocolate and desu, I can't eat a lot of the stuff or else I'm going to end up throwing up. I had an idea to preserve all the chocolate and candy bars for either eating at my own pace, or to use in baking for friends or as desserts at the local food bank. Is there any way to preserve them?

I started making a treat for Christmas and I've run into a bit of a wall. I've melted down some white chocolate in a double-boiler and got thru coating about 10 chocolate truffles before the white chocolate began to quickly turn into a doughy texture, kind of like mashed potatoes if you like them on the firmer side.
I can't work with it like this and I'm not sure on my next step. What did I do wrong? How do I fix this?
Perhaps it cooled down too much?
I've never had success remelting chocolate. You're going to have to get some more.
