What would you guys think about a tabletop system that used Fire Emblem's growth rates? The gist is every time you level, you roll percentile dice for each stat and if you get at or under your point in that stat increases by a set amount

I've been thinking about something like this. The basic problem is that it means that these stats have to be very significant compared to the rest of each character's abilities, which is generally how characters shine and stand out rather than run around as bipedal stat blocks. Works pretty well for a video game, not so much when you're trying to keep multiple people interested.
If you figure out how to balance that, however, I'd suggest running growth rates as adjustable so that if players get bad growth rolls or surge too far forward, their rates adjust so that no one ever gets too far ahead or behind. Personally I'd have max level stats set beforehand and adjust rates based on that, but that's probably not what you're looking for.

Maybe give bonuses for each level a stat doesn't go up (except for 0 stats)? And definitely have caps on stats. The gm would probably have to roll it himself to prevent shenanigans.

Big Bang Theory is bad, but Jack Chick is arguably worse. Arguably depending on whether you'd want people to believe you're an actual satanic wizard instead of whatever that shit in BBT is. Their both about equally far from reality.

4e swordmage was one of the most fun classes that I played. It was an Eladrin loaded down with support powers and the one class feature that let you grant temp hp to allies. I'd mark an enemy and then bum rush a squishy on the other side of the board. Felt great, DM was super salty about it.
He was running pre made modules and had no idea how to up the difficulty.

Wizard makes sense, given high level of education.
Fighter wouldn't be bad. A king ought to know swordplay and warfare.
Bard, maybe, because of the high charisma and support abilities.
Also depends on the society. Is the country religious? Clerics, all of them. Is it an Elven kingdom? Druids.
If you want to do something a little less vanilla, they're all sorcerers, because of their royal bloodline, or they're royalty because of their magical bloodline.
Really depends on what kinda royal family you want.

I usually don't give royalties combat training, at least not the one that are supposed to succeed to the throne. That said I think that most of them would probably be non-martial classes since, given the high wealth, they can probably afford high quality magic instructors and books.
