Ask anything to someone who's worked in the food industry for over seven years. I've worked in small town mom n' pop, I've worked in corporate... Longest job I had lasted 5 years, shortest lasted 1 month. I've seen really good, I've seen really bad, and I've seen 95% health code violation. Been through bosses dying, seen the staff stealing bottles of hard liquor to hundreds of dollars out of the register, witnessed break room drug trades, happened across a drunk patron publicly urinating behind the restaurant... I've got stories, if nothing else.

My jobs have included:

>Hostess/Cashier
>Waitress/Bartender
>Cook (all levels, fry cook, prep cook, grill cook... Keep in mind I've been employed as a cook, not a chef.)

Summer is around the corner and people are starting to throw BBQs almost every day now.

What kind of meat do you throw on there? What kind of marinades do you use?

My recipe:

2 minced cloves of garlic
5 tablespoons of ketjap manis
1 teaspoon of cumin powder
2 teaspoons of coriander powder
1 teaspoon of ginger
2 teaspoons of sambal ulek

this works for about 400 grams of pork.

I normally let it marinate for a from morning to evening, but I'm thinking about letting it marinate for about 24 hours.

Thoughts?

I'm grilling these short ribs tonight. They are at home marinating in soy, honey, mirin, garlic, salt & pepper, water and toasted sesame oil. Mmmmmm galbi

I make tacos from my BBQ'd Meats
1. Combo of Chicken breast & thigh
- Marinade with Memphis Style Rub
2. Get Arracherra from mexican shop
- Marinade with salt and a light mexican beer

After its toasted, I cut it into small 1" cubes, and fry with homemade salsa (Jalapeno, Tomatoes are also grilled). Serve with beans and diced serrano.

Literally have it every day for lunch and dinner.

pollo asada/ carne asada that i make

>1 medium brown onion chopped roughly
>bunch of cilantro chopped roughly
>juice of 5 to 10 limes (make sure you use fucking limes, they are sour and delicious)
>idk how much but a bunch of yellow mustard
>salt

put in plastic bag or whatever and mix together then put the meat in and let it sit for no more than a day....after about a day i feel like it makes the chicken grainy but idk....

grill and consume

'sup co/ck/suckers.

Basically I have cooked $100 worth of weed into butter which i then cooked into biscuits. But I used too much bi-carb soda and it tastes horrible.

My plan now is to crush up the biscuts and make them into a whole new snack to disguse the flavor. I don't know, maybe brownies or a cake or something.

Suggestions? Obviously, trashing the biscuts is not an option. What can I use to disguse the taste?
