1) Appease the biggest mediterranean demographic, and rather than cook actual Greek food, you only cook non-pork items. If there are locals who are muslims, they won't shun your place. Call it a mediterranean taverna and get all the neighboring cuisines into the menu, north african, isreali, lebanese,...
