Giving some likes and dislikes would be helpful in deciding what stuff would be more suited to you. Or at least a list of stuff you've watched.
Also, a good place to start finding stuff to watch is to just watch airing/seasonal anime. A lot of it will suck, but there's always at least one thing you'll like each season, guaranteed.

Southern rock stuff is very prone to this, especially during live performances. Compare the studio version of Whipping Post to the one they perform, for example. I dunno if it's got that "chill" aspect you want but if you like solos then this is your genre.
