Sophie is much more like arland but without time limits, but with monsters and bosses that are actually hard. It manages to be a challenge without arbitrary time limits.

Escha and logy was way better than ayesha, and was the best dusk trilogy game in my opinion. The lack of time limit in Shallie kinda ruined it, even if the time limit was incredibly forgiving in Escha and Ayesha it still gave the game a better sense of pacing. I'd recommend you give Escha a try if you enjoyed the arland games. Also play Atelier Rorona Plus, it's pretty great.
The fact that Sophie has no time limit is making me really leery about it. It's getting decent reviews as far as atelier games go but still.

The first phase with the dragon is annoying enough but holy fuck the second phase. Hits like a freight train and leaves no fucking openings. Try dodging you get fucked, try turtleing and you get fucked. I get to the second phase hit him like 3 times and inevitably die to his bullshit random attacks

It would be really simple tossing some previous dungeon bosses (that obviously don't get utilized) into the land, tuning their HP and damage for X party members, and plausibly making them capturable for a circular tug of war. The crafting mats and bosses (that also drop mats) are placed in a single zone until it's full and/or depleted (then in an adjacent zone), and the players come together and push each other around the map until they get a bunch of bosses to a city.
