It depends entirely on your setup. Lowest ISO you can, and whatever else is needed to get your exposure correct.

Earlier this year I was memed hard by /p/ since I bought a film camera.
I believe I have wasted more money instead of going digital. I was also memed by Ken Cockwell by buying Fuji Velvia not realizing that my local lab doesn't develop slide film.
Anyhow, there's a bunch of $1 expired colored film here. I want to shoot black & white but I cannot afford the $5+ roll per film. Can I just shoot expired colored film and convert them to B&W digitally like in Photoshop?

You can develop colour film as black&white film, use same developers, times, process. Film masking makes it an ass to enlarge but it scans just fine. So yeah, every roll of colour film you have is also a roll of grainy bw film.
If you're stingy about lab development there's always caffenol C, the budget homemade developer. What I'd give for a hoard of expired colour film for $1 a pop.

Ive decided to throw up some more, the colours look straight up wrong on my laptop so im using photoshops auto colour feature as a bit of a temporary crutch. They seem ok on my phone now.

Why would anyone bother with digital crop sensor cameras when fool-frame is as accessible and as affordable as ever (hint: important words for you medium and large format dorks)?
Don't say "I can afford the lenses!". There are fool-frame bodies that natively support crop lenses and if not, then you can get a cheap extension tube to mount it on there anyway.

You can get a Canon EOS 6D or Nikon D600 for less than $1,000 or if you want to go cheap, a Sony a7 for $700 or less.

It came out beautifully with no hint of pixelation. Could maybe go another 5-10 inches
