Good chefs take pride in their work
be aware that the restaurant is a business and they try to minimize loss. sometimes they will use left overs and incorporate them into other dishes to save money. Soup is notorious for being made with border line rotten foods. the soup is seasoned heavily but, it will still be obvious the skimped on the ingredients.

Alexandros - Best gyro ever. In Toronto, Canada. It's in Greektown. All about homemade tzatziki, fresh onions. Traditional ones have tomatoes, but I don't like them in sandwiches as they water them down.

Actual meat is used in proper gyros. Fuck shwarma, kebob, whatever processed asshole meat that is. Greek people know food, it is some good stuff.

I sell pie filling in my little community. It is very popular, especially my apple pie filling variations (candy apple, caramel apple). I've been thinking about making a less sweet, savory pie filling. The type of pie you would top with a slice of cheese. I would add slivered onion and thyme.

Can I make risotto with sushi rice or just regular white rice or is this a bad idea? My grocery store doesn't have Roma or baldo rice. I've only made it once before, it was Ok but not that good. I'd like to try again. I have some nice fish stock I need to use up. I honestly am somewhat intimidated by risotto. Thanks.

Yes, it works. Done it myself.
You can make it with any rice indeed. You just need to adjust the amount of liquid and the cooking time (it will take longer with a long grain, so you want to keep the temp on the low side)
I just quarter seasoned a fried egg, as follows:
NE: tarragon and smoked paprika
SE: thyme and oregano
SW: cayenne and cumin
NW: Salt and pepper
My favourite is thyme and oregano but i like the others too. I can alredy feel myself becoming a spicemaster.
