Probably BFG edition because of Doom 1 and 2. You just get more game for your money. I bought BFG edition and honestly played the originals more than Doom 3. They're MUCH faster game play and they don't piss you off with that scripted spawning an enemy behind you bull shit that pisses me off in any game that does it. Doom 1 and 2 don't do that, the enemies are hidden behind secret doors and shit that open up behind you as you progress but they don't lazily just appear in the game world.
TL:DR neither, get the Doom Final pack with doom 1 and 2 included.

Then go back and try out RE so you can see the differences, and enjoy the camp. It's definately a classic for a reason.
People will probably tell you to play the gamecube remake first. Don't. A huge part of enjoying that game comes from having beaten the original. It's meant for people who played the original from that game's creator, so don't spoil it for yourself.
You should probably emulate the original Resident Evil release. The director's cut has some pretty shaky alterations.

I played it when it first released but I must of plaed it drunk because I don't remember it all that well. I started replaying it today, it's fun but these dumb "kill the commander without being seen or he sets off an alarm" is so dumb. It feels like it's just that over and over. Most fun I've had with a shooter in years. Accidentally saved myself into a corner with 4hp and spent a decent amount of time battling my way out, shit was glorious. Health-regen peekaboo shooters just can't compare.
