1. DSI: Had no warping between areas until late game. It is not that long, not to mention it was probably your first souls game and so took more to complete. Masterpiece.
2.DSII: Uninspired piece of shit with vast linear levels.
3.DSIII: Everything is densely packed and well connected. Masterpiece.

So I downloaded Doom earlier, played around with it, and after 2 hours I applied for a refund.

False, you can get ammo and health normally, sometimes they don't drop anything.

It's called progression, it's like how you get more weapons in the original game. It's make it more fun to play later on. You can also replay the entire game with everything unlocked once you beat it.

I'm at Road of Sacrifices and I'm still using all my default equipment besides a Battle Axe which I got very early on (and upgraded). All equipment I've come across since has either been too high-level or inferior to my default stuff. Am I missing something?

I only played Jak and Daxter growing up, but then I ended up playing Sly and Ratchet from the HD collections, and honestly I feel like I missed out not playing Sly Cooper as a kid.
