Dark Souls 3 is easily the hardest, simply because the bosses in the second half of the game all become extremely aggressive gimmick fests with massive health pools. Coincidentally 3 is also the worst game in the series, despite one of the main draws of the series being its addictive challenge.
Gonna have to go with Dark Souls II for nothing other than the utterly broken hitboxes.
1 is easily the most challenging
