Because 90's Rareware magic won't save them anymore. Back in the day, DKC's trilogy was fucking gold. If you had an SNES, chances are you probably had or played Donkey Kong Country.

Easy as pie, you could even mod your Wii U's internal Wii to run Gamecube games. That isn't easy as pie though.
They don't want it to be an RPG because they want it to be different from the Mario & Luigi series.
