I haven't been impressed with any games visuals in 3 years. I feel like we've hit a wall where it's "good enough" and I'm tired of upgrading. I could play with an i7 for the rest of my life.

It's sort of the opposite for me. I'm impressed with the visuals of nearly every game from the past decade. I seem to have lost the ability to assess graphical quality; everything looks amazing (except for games with a terrible art style like Battleborn.)
Maybe I've played too much Dwarf Fortress or something.

Yes, definitely. Modern "graphics" is all about getting as many stupid particle effects on screen as possible it seems.
I've been satisfied with game visuals since HL2 Episode 2 came out, I really don't care for anything more than that. From this point onward developers should be focusing more on visual style than technical fidelity, we literally have all the building blocks and processing power required to make anything look exactly what we want it to look like, but developers focus on more fancy, resource-intensive particle and lighting bullshit that doesn't matter instead it seems.
It's really annoying seeing my hardware continue to go out-of-date while seeing almost no improvement in game visuals at all. If my computer can run Battlefield 3 at max settings at 60fps then I really should not be struggling to run Far Cry 4 on medium.
