I'd say that "honour" would go to the main producer or group of producers, if anyone.
Anyway, the director gets the credit because they take what's down on the page and transform it into something that works within the realm of a visual medium.
What exactly makes Empire so timeless and good? This shit is 35+ years old and still feels absolutely flawless for today's standards.

Well-paced, thematically enriched without being excessive and getting in the way of the adventure. It's more melancholic than the original, but retains an underlying sense of hope which gives the movie depth (the final scene in particular is one of my favorites). Combine that with some strong characters and some cool action sequences and there you go.

I've only seen him in Zero Dark Thirty and that planet of the apes capeshit. He seems fine but like most australian actors I imagine he'd be a lot better acting in his own voice rather than doing a generic american accent.

It's the Jedi's choice.
According to the EU the crystal decides the color. I don't think the movies ever officially gave an answer what dictates the color. However Luke was originally supposed to have a blue lightsaber in Jedi, but ILM realized that because of the Tatooine sky was blue, the lightsaber wasn't visible in the outdoor shots against the blue sky in the background. So they changed it to green so that it would be more visible. Also there is a deleted, short scene from ROTJ which shows Luke assembling his lightsaber and igniting it. If you don't believe me about ILM changing the color of the lightsaber from blue to green, just watch early teasers for Return of the Jedi where it is still blue.
