Went to Italy once, had Spaghetti Carbonara and Pizza Quattro Formaggio.

Girlfriend and her family are fresh off the boat from Naples. Her dad owns a pizzeria/restaurant here in the Northeast. They make typical pizza, like Americans expect, but the dinners are amazing. That man makes a vodka sauce that I would suck dick for. Plus
the food cooked at their house is awesome. I'll actually be in Italy come the end of May. Can't wait. Just going to stuff my fat fucking face with pizza fritta the whole time.
That said, Italian food is simple as shit for the most part. It's not skill intensive, but takes time. The quality of your ingredients has a huge effect on the end product; more so than with other fare I feel. Now that I know what to buy/where try get it from, I can make Italian food that people are floored by.

Have you ever experienced Ecuadorian cuisine?
I went to Ecuador 2 years ago and I really likes the food, even the stuff I got from food courts was really good.
I live in New York and there are a lot of Ecuadorians here, but I've only been to one Ecuadorian restaurant so far. I ordered a seco de Gallina (I think it's called) and it was pretty good, but not as good as what I had in Ecuador.
If anyone has some recommendations in restaurants around here or dishes you like, please share them.
