If you're talking something you have to watch even if you don't want to in order to fit in with anime communities, then the only title that qualifies universally is Neon Genesis Evangelion. If you have a particular community you want to fit in with, you should lurk and see what anime come up in discussion the most and which characters are continually referenced to see what shows are the core for that group.
If you mean a criterion collection of quality titles, that's entirely subjective and you're better off just pursuing your own tastes.

I need advice on what animu to watch next. I'm pretty well caught up with the last few years of shows, since I started watching stuff as it was released in like 2014. I've gone back through most of the classics of the last almost 20 years, but I'm running out of stuff. I need suggestions on like 8/10 and above animus that are easy to miss.

sure, it's command line only and that's a bit scary, but it does almost every format known to man. basically every free tool that deals with av codecs has ffmpeg under the hood anyway and is nothing more than a glorified GUI.
