Asahi is clearly taking the heroine role. The thing is Nozomi is the queen of fairies and an older, more experienced hunter than Nanashi. Having her fall for Nanashi would be hamfisted and rather blatant waifupandering, since she has no reason to fall for you. Asahi is the childhood friend and Isabeau basically a classmate, it's more natural that they'd fall for you.

I don't know, I never really paid attention to it but I mostly used demons that weren't exclusive to any of the routes. I think there are some quests exclusive to the chaos route on a NG+, unlike the law route, but don't quote me on that.
