Anybody else been enjoying either version this past week? I went with pic related myself (had Protoman as a kid). The Souls are pretty sweet even if the Dark Chips for this version's Chaos Unisons require a bit of research to find.

They actually did a few extra things for the eShop release that I think make it worth throwing a few bucks at. Opening the multiplayer menu gives you the event/Protoman exclusive chips, and the game automatically gives you Bass Cross (though I'm not sure exactly when), which was never even made available in the US unless you hacked the game.

This has gone too far now.
Just focus on 1 series then. Make it all Zelda, or all Fire Emblem, or all retro characters, or all DK. That way not as many people are bothered by the huge lack of characters.

I'm 85 hours in on my EX Hard run and going for that sweet 100%.
I did everything with Kiryu but have not bothered to do any side stuff since, just got to Project Diva: Haruka edition, makes a nice break I guess

That's pretty much what I did. Just so you know you can't make a clear save data from premium adventure mode so everything you do in premium adventure won't carry to a new playthrough so it's a good idea to focus on the story and 100% the game on EX Hard after you beat the story.
What other job minigames are there? I've finished most of the hunting one so far.

How does Japan manage to make better games than the West despite being such a small country in comparison? There really should be more great games from the West since North America + Europe has 10x more people than Japan, yet their number is pitiful compared to all the Japanese classics + modern games.

Your premise is flawed, both the US and Japan are done for as far as innovation goes. The last real hope of fresh ideas put into action is probably CIS devs, which could extend to general Eastern European devs like CD Projekt.
