And finally, with the addition of the Sony Multiplat Machine, I have joined the glorious idort master race.
Should I buy the Uncharted Colletion (I've never played any of them) or Destiny (to play with a buddy)?
Are there any games on this thing for non-degenerate weeaboos other than Bloodborne and the new R&C game? I'm planning on mainly using this thing for playing with friends.

Anything can happen Anon, you just have to believe.
It's entirely possible to "hijack" all sensory nerves leading into your brain, as well as all motor nerves leading out, such that your entire reality can be faked by a sufficiently advanced computer. We don't have the technology to do this, but there's not really anything that suggests it's impossible.
If whatever program you're "trapped" in is perfect enough, it would be completely impossible to tell you're in a simulation.
But, we probably won't have this technology for a few centuries at best.

I like space. I like flying ships. I like scanning shit and learning/reading about it. I like shooting things in space. I like the idea of learning in universe languages. I like the idea of adapting to hostile environments.
NMS is offering this to me, and I have a PS4 so why not?
I'm sure Elite Dangerous and Star Citizen are great too. Unfortunately my PC is a toaster and those games aren't done yet.

I feel like I'm doing something wrong for this Orthos/Wind Temple boss fight. I beat the dragon pretty easily but the AOE from these shits is kicking my ass. I'm fully decked out. Even took mage shells to protect my party but I'm getting my ass kicked. Playing on hard but I was told I shouldn't really need to grind. Am I missing something? Party is dying too fast.

Those two somewhat contradict. I don't know about Hard, but I know for certain you don't need to grind on Normal, but I would think that would hold true for Hard as well, since the game is more about discovering a strategy.
Hard is garbage, however. It requires you to use specific strategies on bosses, and if you aren't using that strategy, you stand little to no chance of success. For Orthos, specifically, have a Black Mage focus on one head with its opposed element until it stops glowing, then do the same on the other head. When they're both dull, I believe it cuts off their most powerful attacks, which should make things a lot easier for you.
