Because it's very difficult to do right. FTL is a great example; it had great atmosphere and visual feel, but fucked up being too RNG heavy.
Freelancer is the only game here worth mentioning.
Genre is dead because Freespace 2 and Freelancer mods perfected the genre years ago,
Since then we've really only had the X series to keep it alive, and the latest game flopped hard.
There has been a resurgence of games, Elite: Dangerous is immersive, but really really fucking dull content wise as it all revolves around credit grinding that makes EVE look fun
Then there is Star Citizen, which is shaping up to be one of the best space games ever made, but its too early in development and is suffering from extreme feature creep, however on the current alpha build being able to exit the ship and go exploring in a derelict station or run around planetside, or even run around on your own ship while it is in flight is pretty fun, we just need to hope that it doesn't go full Elite Dangerous and actually remembers to add in content to do.

Don't worry about losing some characters, you're totally fine without them. I think it's most fun to play through the game without resetting.
Once you're done FE8, the most logical step would be to play the other GBA games. If you don't like the tutorial in Lyn's mode of FE7, you can download a save file from gamefaqs which will let you play Lyn mode on "hard" (you don't get forced to make bad decisions like the tutorial makes you) or you can skip it entirely.
