Ramsay was dumb as fuck in this episode. Killed nearly all of his own men to go for an all in tactic of closing the wall in on them when he could've just killed them conventionally by using the numbers he had. He managed to kill all of his horses when he had thousands more than Jon.
Then he tries to kill Jon with a bow when we've already seen he's a great swordsman and Jon's been fighting for ages already so he's winded as fuck.

Instead, it was all about formations and maneuvers by large groups. And you can just strap some shields to his boots and gut to protect him from swords and spears, but even if you manage to hit him with a spear, i doubt you'll reach anything vital. It's like fighting an armored intellegent elephant. Add a huge tower shield made of wood and some club, and he would be able to take on as many soldiers as he wants, untill he tires out. After burning Stannis' camp he still met him on the battlefield because he knew he had a massive advantage and would have won. He met Jon's army on the battlefield because he had a massive advantage along with a psychological weapon and he would have won. Nobody saw the Vale army coming so Ramsay couldn't really plan for it. The only thing he could do was retreat and hold the castle. He lost the castle too quick due to the giant, then his men either died or deserted him. All he had left was to kill Jon (which would have meant he had won the war) and hopefully find some way to stay alive.

Wild dogs can go incredible periods of time without eating. It's a part of life for them, they aren't fed every day like househould pets. And the relationship between dogs and humans goes back millions of years and is super intricate. A dog doesn't eat a master alive after seven days of not eating.
