Okay so here's the thing
I'm qualified to talk on the issue on the basis of getting an A in high school physics
First a theoretical explanation:
Torque is literally force, power is literally power and Rpm is literally frequency.
When you multiply torque by 2pi you get the amount of work being done in a single rotation of the crankshaft. When you know multiply that by the number of rotations in a period of time.(rpm) you get the number of times a work is being done in a period of time also known as power.
In a more down to earth perspective, imagine two workers. Abdul is strong, so he can carry four planks of wood at a time, and it takes him 5 minutes to walk up the stairs and drop them off at the top.
He works with Usain, who can only carry two planks of wood but can run up the stairs in just 2.5 minutes.
So they both make the same power because they do the same work in the same amount of time even though Abdul can carry more at a time (has more torque) because Usain works faster (runs at a higher RPM).
Now let's switch it up. Both Abdul and Usain are only working at 3000rpm because they're just idling along the highway in top gear. Usain is still only able to carry 2 planks, so he's only making half as much power as Abdul.
That's why people say they prefer torque. Even though in best case scenario both Abdul and Usain make the same power, when cruising along the highway at a certain RPM Abdul will be able to accelerate faster because he has more torque.

You're not quite right:
When Abdul and Usain make the same power, and provided they have similar gearing, they will accelerate at the same rate. RPM is a meaningless number, because a bike with less torque and the same power will have a higher rev limit.
Noone would ever think of doing a highway pull starting at 4000rpm, it's be a case of let's both go 35mph and go WOT.
Case in point: my favourite example of Street Triple vs Nuda 900.
Both make roughly 106hp but the Nuda makes 98Nm while the STR only 68Nm.
The Nuda is ever so slightly faster due to shorter gearing.
Check out pic attached: In the bottom half the gearing is stock: the Nuda has much shorter gearing in 1st and second, but if one were to equalize the gearing (top half), the driving force (i.e. the force that accelerates the vehicle, not the force that turns the crankshaft) is almost identical at any given speed.
In fact, the Nudas 0-100kph time suffers because 1st gear only goes to 85kph, while the Triumph doesn't lose time to shifting.

Torque is just as meaningless without RPM as RPM is without torque.
If at some point two bikes are making the same power and are moving at the same speed, the driving force (or torque) at the wheel will be the same, because W=F*S, V=S/T and P=W/T, therefore P=F*V
If the Nuda and the STR both have the same drivetrain (same RPM at same speed) then the nuda will pull better all the way to the redline.
Gearing is there to keep the revs in the powerband. If we had an engine that made constant torque from 0 to infinity rpm we'd just give it the world's biggest reductor and wave it on it's way. That'd be your electric motor
If we had an engine that only made any torque between 9000 and 9001rpm, we'd need a cvt transmission to move at all. That'd be your 125cc race two stroke. Everything else is a compromise between the two.

Motorbikes, particularly edgy two stroke sports have a torque curve that sharply rises at a certain RPM, and even though they have reasonably high peak torque they don't accelerate at all below that threshold because they have a shit powerband . VTEC systems are notorious for it. Again, peak torque is meaningless without a torque band and a torque band is only as meaningful as a powerband

Hey /dbt/ I tore down my carbs and cleaned them over this weekend, set the idle mixture screws to the factory setting, and synced the carbs, but I still can't narrow down the idle speed. I get it set, ride a bit, then when I stop and idle it is way high (2.5 to 4k rpm) or so low it feels like it is gonna die (1k +/-200).
Also when the bike is warmed up the choke doesn't seem to do anything until I slide it half way, then the RPMs go up. I know the cable is in good shape, just seems odd to me.

It's usually not too bad. I think the difference between idle and peak torque on my bike is like 45lft-lbs to 75lb-fts, anything over 5,000rpm (13,750 redline) is more or less peak torque though.
That being said, I wouldn't mind gearing the bike down a bit. Going 100mph in 1st is all well and good, but anything under 15mph and I've gotta slip my clutch.

I want to get into track riding. I had a brain hemorrhage a few months ago though, so I'm really easing myself back into riding. The R1 has been surprisingly accommodating, it's really docile down low.

Adjustable rearsets (forward and up)
Braided brake lines (front and rear)
Translogic Quickshifter
Healtech GIpro-X
and some odds and ends
Going to see how I go from there.
Been thinking of getting an 06 or 07 R6, and an RS250/RGV250/KR-1S as well. Twisty roads 5-10 minutes from here.

They use the RGV250 engine but have bigger carbs. Around 80hp with a decent build. Mental little bike.
Tyga makes a kit for them, but I kind of prefer the stock look honestly.

Don't they have something like 16hp? The last year for the RGV250 made 70hp and weighed 140kg (208lbs). RS250 is 80hp, KR-1S is 80-85hp.
RS250 will do 0-60 in around 3.5 seconds. Crazy stuff for a 250.
Ride an MC22 if you ever get the chance too. A good one is around 143kg and makes 45/46hp. They sound awesome though.
