I live about 10 hours away from Dallas, where Wrestlemania is. Is it worth going? Watching at home with a pizza would probably be better than sitting in some crap seats.

I don't know about "ultimate", but being able to take a otherwise trained fighter to a phase of combat (ground fighting) where you have much more training and force them to quit or be injured/rendered unconscious (submissions) is pretty good and gives you a lot of advantages for 1v1 fighting.

I just find him boring. The way he just casually meanders to the ring as slowly as possible, the fact he has the slowest paced matches and has to pinch off any momentum by strumming an air acoustic guitar.

you need to keep better posture and positional awareness. If you're stuck in turtle you better start hand fighting, sitting out doing whatever you can to not have your back take. Control the position, fight the hands. those are the critical ideas you should be thinking to reduce being choked from RNC

Not possible. Wrestling has been different things in different eras. I don't think you can even do a fair comparison between (say) Lou Thesz and Antonio Inoki, because they had their primes in different periods. Once you start trying to look at guys even further apart in time the comparisons go from unfair to meaningless.
