So /a/, I saw Rin and I just fell in love. Now I want to watch the anime she's in but it seems there are many Fate anime out there, any guide on how to watch them? Or there's only one I should watch?

If you want the full backstory to the storyline, watch Fate/ Zero first
If you don't give a fuck about all the backstory and just want Rin goodness, watch Fate/ Unlimited Bladeworks. It's a complete story in its own right and you don't need to watch Zero beforehand, but there are some references you'll have to just roll with.
If you watch both of those and you really want more Fate, then watch Fate/ Stay Night.
So Zero if you want backstory first, then Unlimited Bladeworks. And only watch Stay Night if you really love both of those.

I do but the show just left a strong impression. The marraige of fantasy and thematic elements was beautiful. A show about emotional and literal stasis. A show where those who are emotionally stagnant are those who physically endure time while those who wish to change are in a literal stasis. The trials of the characters endured showed the sea god who himself was both in literal and emotional stasis the truth of relationships. The sea god was in search of a meaningful relationship with his people free of emotional pain. However such a thing does not exist. Love is like the sea. You have to embrace the pain as with the joy and that is when new feelings are born.
Why can't anime with more complex plots and focus on thematic delivety handle their exposition? In all these kinds of shows like Eva, Lain, Utena, Ghost in the Shell there is always this blatant exposition dumbing. In Eva we get Kaiji, Seele and a whole flashback episode dedicated to exposion. In the film we have projections of Yui and Rei shoving the themes and message of the series in our faces. In Ghost in the Shell we have the Puppeteer and Motoko telling us what issues to think about. In Utena we have all of episode 34 with the shadow girls, in Lain we have first the scientist who worked on kids and then episode 9 where the narrator describes all of these files which explain to us everything. I won't even mention shows like LotGH which have terrible exposition all around ep after ep.
Why is this? Anime have evolved a lot in terms of animation, cinematography and visual design. It seems to be a medium with lots of competent directors. Is it their fault that they don't pay attention to this aspect? Or is it a lack of good scriptwriters?
There is nothing wrong with exposition.
There's a difference between having a complex plot and going out of your way to make your story as impenetrable as possible.
