That is actually hilarious because early Medal of Honor/Call of Duty games until Modern Warfare were actually pretty good for what they were trying to do (which was pretty much "wartime Half-Life"). Series rolled downhill after Modern Warfare because of the campaigns in style and length of Michael Bay movies, and overly easy multiplayer designed to excite 12-year olds for whom Counter Strike is too hard.
The truth? The truth is that there COULDN'T be a "hipster CoD" back then, because the "yearly release" and "AAA gaming" meme didn't exist. Gaming simply WASN'T a business back then, it was exercise in art and in coding, but only publishers were able to get any real money out of it.
Closest thing to "triple-A franchises" would be mascot platformers, and era of mascot platformers wouldn't end until PS2. Back then Doom was always a cool edgy alternative to "mainstream" gaming of the time because A) it was on PCs, and B) it was aimed at adults. But even then, mascot platformers were still taking a lot of chances and were produced primarily as a pieces of art helped by an established brand, rather just as a brand product.
I mean, even Electronic Arts at the very beginning had this mission statement:

Tomb Raider was kinda exception at the time, I mean - Quake 2 was also a sequel made in a year and yet it was very different compared to Quake (completely new setting, completely new weapons, new enemies, engine, actual story, etc.).
Also Tomb Raider died down because of shitfest that was Angel of Darkness that was shitty attempt to cram a lot of popular buzzwords into Tomb Raider framework (multiple characters! character stats system! epic cinematic story! stealth segments! etc, etc.) I personally wouldn't be against calling Angel of Darkness as a proper start of triple-A shitfest that continues to this day, since it was the first time publisher's pressure to include bunch of "selling points" features has killed a franchise (gee, remember when we used to call them "series" instead of "IP's" or "franchises"?
