In the original Total War: Shogun, I once watched a Kensai successfully defend a bridge against an entire brigade of enemy Samurai. In that moment the last vestiges of historical accuracy drained out of the series, never to return. It wasn't a great loss: the franchise is still the best wedding of tactical and strategic layers ever to grace a computer. But given the emptiness of its historical settings, it makes sense that Total War has finally ditched any pretence of simulation with the entirely pretend Total War: Warhammer.
Not that the result has much in common with either piece of source material. As a veteran of both, I started out utterly confused after an inexcusably bad tutorial and lack of instruction material. Miniature gamers will discover that tried and tested tabletop tactics don't work on these digital battlefields. Total War devotees, on the other hand, will find that while the mechanics are familiar, the vast diversity of new and bizarre units make the game play very differently to its predecessors.
Given how awful the learning curve is at the moment, it's tempting to stall on this until various bloggers and vloggers have got on the case to smooth it out. Patches will come, prices may drop. Those who like a challenge may wish to take the plunge now and learn the hard way. Either way, if you have the slightest interest then this is not a game to miss. In bringing fantasy to Total War, Creative Assembly have made both the best Total War game and the best fantasy strategy game to date.

The fact that events have been shifted around in relation to each other and essential plotlines and characters deleted for the sake of brevity means that half the characters no longer have anything resembling coherent motivations, much less COMPELLING motivations.

No, you cannot. Paradox games can do that simply because of how hilariously simple the actual DLC pack is as it's a rar file.
You don't need them though, since they for the most part only unlock factions for player use (the AI gets them whether or not you've bought the associated DLC) or add semi-scripted campaigns to the game. Get the blood pack though.

Also, is it just me or are VC the cheesiest faction? Most of my battles against the AI involve using Manfredd or a Vamp hero on a Hellsteed flying over and using Spirit Leech or fate of bjuna to wipe out Lords and high value units. Without death magic they'd pretty much get fucked in the ass by everyone as far as I can tell.

Most generic lords die a perma-death, but plenty where those came from. Legendary Lords die for 5 or fewer turns and then are available for re-recruitment later.
If you want to play a less Death magic reliant VC army I'd recommend going down the beast tree research and grabbing some bats/wolves/vargheists/terrorgheists for your army. Others have attested to the efficacy of crypt horrors, which I cannot confirm.

I always think the bats and wolves are weak as fuck, plus I'm pretty late game now so they are outclassed by everything. Terrorgheists are cool but never seem to do quite enough damage. Great for fending off missile cav and artillery if you can stop them being bum rushed by infantry but all their units seem at best so-so to me. Grave guards are decent damage sponges I guess and cairn wraith seem to be good flanking infantry. Their cav is only OK though, even the hexwraiths and shock cav. All their units seem a bit underwhelming late game and it's really only death magic that stops them getting their shit pushed in as far as I can tell. They go from Varghulfs being able to solo armies early game to only being alright late on.

So I learned this battle that if you stick narrow columns of handgunners in between high threat units like greatswords or halberdiers in your battle line the AI is not inclined to attack them, allowing them to pepper away with minimal micro the entire battle.
Had 4 units of them and they noscoped almost 1000 orcs between them.
Also if you can't be fucked with keeping tabs on your outriders, just putting them right behind your frontline regiments allow them to shoot over them from their horses throughout the battle.

I find the main trick with VC is morale breaking. Half the time my units wouldn't get a massive number of kills just because we break enemy infantry faster than we kill them. And yeah, your flying monsters work like cavalry that are faster, more manoeuvrable but more difficult to disengage. I usually just send them after missile cav or into the backs of a melee line. It does make it a pain to fend off the Chaos stacks though, which are generally full of heavy infantry that win in melee decisively and don't take very much morale damage.
