I've been doing SL25 invasions in the undead settlement and really enjoying it desu. Not even twinked, just normal character with shitty rings atm, using a +2 RH Halberd and a +1 blessed R&W shield I got from around there.
On the one hand I'm finding even here, parrying is still the most important skill to have, but even then I don't mind since parrying is something I've avoided for over 300 hours of gameplay (it's pretty useless for SL120 PvP of any kind since everyone knows how to play around them or just uses an ultra weapon), and there seems to be no better way to practice parrying than low level invasions.

Pretty sure it's important for literally all levels of invasions considering wherever you are you need a way to 1-2 hit kill people or they'll just out-heal and outnumber you.
Ultimately I'm going to have backup saves at SL25, 40, 50 (heard it was good for low end aldrich invasions), 60, and 80. What I want to really see is at what point seed use becomes cancerous and excessively common.
I'm pretty happy with fighting 1v3 or even 1v4 if it means I can run back to mobs. If it's just me vs. the host then I never use mobs but if I'm getting ganked I think using mobs is absolutely fair and honestly, how invasions are supposed to work. Invader + mobs vs. host + his cronies.
But otherwise yeah pretty sure parrying is pretty damn important for invading at any level, it's just that SL20-30 is low enough that you don't need hornet ring to kill people usually and it's far less cancerous since you can often find people just playing the game naturally (again, how invasions are supposed to work imo, not people waiting for you with their SL200 password summoned buddies).

SL25/+2 is good for low level invasiond
SL50/+5 is a good range for aldrich fun
SL80/+10 is decent for end of NG invasions
SL90/100/120 is more duel oriented (or NG+) and 'meta' is more prevalent, but it can be fun - ganks here tend to hurt a lot though
Ganks are pretty common across any range due to passworded phantoms. Make backups and see how far you can push it before you feel you're crossing out of a bracket. +8 weapons are also the first tier than can invade 3 levels down, so if you keep your level low (40~50) w/ a +8 weapon you can invade down to +5 weapons.

Holy shit YES DS1 is still worth playing. It's overall a better game, though I love DS3.
No huge mechanical differences, invasions/PvP are still a thing but you'll want to download DSFix and DS connection manager to smooth out your experience.

it's a different game for sure but it's probably still my favorite of the series. The world was so perfectly overlayed and interconnected while still remaining large and wide stretching. I solo'd my way through it so it has the most memorable moments for me so I guess thats why I feel that way about it

Playing Das3, this is my first Dark Souls game, having come from Bloodborne. I started as a Knight but do I really need to focus on shields? Using a shield + 1h sword + bow + armor all together seems to over encumber me pretty easily. Also like I said, having come from BB, I tend to forget about being able to block and just instinctively roll instead and that seems to work out decently. Should I maybe just drop my knight's shield for a buckler or other small shield to use for parrying and any blocking I might be forced to do?

BB was my first too. Honestly, I think having shields is pretty pointless in this game, considering how fast the rolling is.
I'd definitely recommend a small shield though for parrying if you need it.
